Caramel Apple Pancakes

Pancakes almost always seem like a weekend thing. They are time consuming, yet tasty and sometimes unhealthy. Although, thanks to these pancakes, those thoughts are a thing of the past. These are easy to make, only dirty up three dishes (including your plate) and can be frozen for a quick weekday morning!

In this recipe I wanted to combine simplicity with tastiness. Sweet yet tart apples are combined with hearty almond flour and energy boosting cinnamon, for a delicious boost for your day. Apples provide fiber to help keep you fuller longer. Apples also provide an array of phtyto-nutrients along with antioxidant properties. Among these nutrients include Vitamins C and B. Almond flour is one of my favorite gluten free flours. It can easily be made at home or bought at the store, while it also combines well with many different recipes. The best thing about almond flour I enjoy though is the taste and texture. It has a distinct hearty, nutty flavor and a light and fluffy texture. It can also be combined with the right things to create a treat that will be indistinguishable from a non-gluten free item. To further increase my morning energy boost, I topped my pancakes with some homemade peanut butter.

Caramel Apple Pancakes

Gluten Free

Ingredients:

1 1/2 cups almond flour

1/2 cup certified gluten free oat flour

1 1/2 medium ripe bananas 

3/4 cup organic apple sauce

2 local or organic brown eggs

 1/2 tsp sea salt

1 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking soda

1 golden delicious (or other tart/ sweet) apple, thinly sliced

coconut flakes for garnish

Caramel sauce:

1/2 cup dates, soaked for about 3 hours or overnight

1/2 tsp sea salt

Instructions:

For the pancakes, add all the dry ingredients into a blender and slightly pulse to combine. Next add in your eggs, apple sauce, vanilla, almond milk, banana and blend on high for about 30 seconds.

Heat a non-stick skillet over medium heat and pour about 1/4 cup of the batter into the pan, then top with about three apple slices. Cook the pancakes on each side until they have fully puffed up. Recipe makes about 8 - 10 pancakes. 

For the caramel sauce, de-pit and soak the dates then add them to a hight speed blender along with about 2-3 tbs soaking water and the sea salt. Blend until your have a made a smooth puree and there you have it! Spread between some apple pancakes. Feel free to use the caramel that is left over from this recipe along side some apple slices. Enjoy!
